Watch out for
- Lower temperature (360 °F vs 380 °F for fresh) is critical — a frozen breast at 380 °F over-browns the exterior before the centre reaches 165 °F.
- Confirm 165 °F / 74 °C internal temperature with an instant-read thermometer. Visual checks alone are not safe for frozen poultry.
- Do not season before the first 5 minutes. The ice crystals on the surface make seasoning slide right off.
