Frozen mozzarella sticks are the single most timing-sensitive frozen item in an air fryer. The 6-minute window at 380 °F (193 °C) is narrow — go longer and the breading ruptures, go cooler and the cheese stays cold inside. Treat the brand row below as the source of truth per product.
Technique
Cook directly from frozen. Lay sticks flat in a single layer with visible space between each stick — they expand as the cheese softens. Flip individually at 3 minutes (a basket shake will roll them but is rougher).

How to tell it’s done
Breading is golden brown on all sides; sticks still hold their shape; a gentle squeeze reveals soft cheese without visible cracks in the breading.
Watch out for
- Do not go above 380 °F or beyond 7 minutes total. The breading ruptures and molten cheese floods the basket — one of the messiest air fryer accidents.
- Never cook thawed mozzarella sticks. The breading splits the instant they hit the heat.
- If a stick splits during the flip, remove it immediately — leaving it in just turns it into a cheese puddle.
