Doneness
Exterior is golden-brown with no pink seeping; centre is opaque white throughout when sliced; juices run clear, not pink.
Technique
Cook from frozen — no thawing needed. Start at 360 °F for the first 5 minutes to thaw evenly, pull out, brush with oil and season, then return to the basket and finish at 360 °F. Confirm 165 °F internal at the thickest point with an instant-read thermometer before serving.
Oil & seasoning
Brush both sides with a thin layer of olive oil after the first 5 minutes once the surface has thawed enough to hold seasoning.
Watch out for
- Lower temperature (360 °F vs 380 °F for fresh) is critical — a frozen breast at 380 °F over-browns the exterior before the centre reaches 165 °F.
- Confirm 165 °F / 74 °C internal temperature with an instant-read thermometer. Visual checks alone are not safe for frozen poultry.
- Do not season before the first 5 minutes. The ice crystals on the surface make seasoning slide right off.
