Technique

Cook from frozen — do not thaw. Single layer with tails pointing up so the breading on the underside touches the basket grate and crisps. Shake gently at 4 minutes.

How to tell it’s done

Breading is deep golden; shrimp tails curl into a loose C; biting through gives a crisp shell, opaque pink-white shrimp, and no rubbery centre.

Watch out for

  • Do not exceed 9 minutes total. Shrimp go from cooked to rubbery fast — every additional minute past 8 makes them tougher.
  • Skip popcorn shrimp brands that arrive heavily ice-glazed. Run them under cold water for 15 seconds to wash off excess ice, pat dry, then air-fry.
  • Do not crowd. Shrimp release a little moisture and will steam each other if stacked.
