Doneness
The custard is set with just a slight wobble at the very center and a knife near the edge comes out clean. It firms as it cools; a souffléd, jiggly center needs more time.
Oil & seasoning
No spray — grease the dish lightly if not using a crust.
Season with: salt, black pepper, nutmeg, cheese, fresh herbs.
Watch out for
- Tent with foil if the top browns before the custard sets.
- Cook watery fillings first so the custard doesn't turn out runny.
- Pull at a slight center wobble — it sets as it cools.
- Use a dish that fits the basket with airflow around it.
