Doneness
The frittata is puffed, golden at the edges, and the center is set — a knife comes out clean and the surface no longer jiggles when nudged. A wet center needs a few more minutes.
Oil & seasoning
Grease the pan well so the egg releases cleanly.
Season with: salt, black pepper, cheese, fresh herbs, garlic.
Watch out for
- Use a greased oven-safe pan that fits the basket — egg poured into a bare basket runs through.
- Cook any watery vegetables first so they don't make the frittata soggy.
- Pull at just-set; carry-over heat finishes the center.
- Let it rest a couple of minutes before slicing.
