Doneness
Both sides are golden and the center is set, not wet or custardy. A soggy middle means the soak was too long or it needs another minute per side.
Oil & seasoning
Spray the parchment and mist the tops so they brown evenly.
Season with: cinnamon, vanilla, nutmeg, maple syrup (after cooking).
Watch out for
- Use thick, sturdy bread — thin slices turn to mush in the custard.
- Let excess custard drip off so the centers cook through.
- Use a parchment liner so the soaked bread doesn't stick.
- Add syrup after cooking, not before.
