Doneness
The top is set and golden and the edges pull slightly from the pan; a toothpick comes out with a few moist crumbs, not wet batter. Fully clean means they may be overbaked and dry.
Oil & seasoning
Grease and line the pan with parchment so the bars lift out cleanly.
Season with: brown sugar, vanilla, butter, chocolate chips, salt.
Watch out for
- Line the pan with parchment so you can lift the slab out to cut.
- Pull while the center is slightly soft — they firm up as they cool.
