Doneness
Bread exterior is gold and crisp to the touch (not brown — that's overdone); cheese pulls a thread when the sandwich is opened; fillings are warm but not steaming-hot through the bread.
Technique
Wrap the assembled sandwich loosely in parchment (not foil — foil over-shields the surface), place flat in the basket, do not flip. Lower temperature than other reheats so the bread reaches gold-brown without scorching; cheese melts through; lettuce or fresh tomato (if present) gets uncomfortably warm but doesn't wilt visibly in 3 minutes.
Watch out for
- Pull any cold-only fillings (mayo, fresh tomato slices on a cold sandwich, raw onion) before reheating and re-add after. They turn watery or oily in the heat and will weep through the bread.
- Avoid temperatures above 340 °F. At 350 °F+ the bread crust scorches before the cheese reaches melt point — the sandwich reads burnt-and-cold-inside.
- Skip the reheat for sandwiches with wet condiments already applied (mustard-soaked rye, BBQ sauce on pulled pork) — they reheat better in a covered skillet so the moisture stays sealed.
