Fries are evenly crisp; centres are hot through; thicker steak fries may need an extra minute.
Technique
No oil — the leftover fries have plenty. Spread them in a single layer, shake the basket once at the halfway mark, and salt again at the end so the fresh salt sticks to the hot oil on the surface.
Watch out for
- Do not stack. Stacked fries steam each other and stay limp.
- Skip this for fries that came in a sealed container with a lot of condensation — they will never crisp back. Dry them on a paper towel for a few minutes first.
