The meatballs are browned all over and read 165 °F (74 °C) at the center with no pink. Overcooked turkey meatballs feel firm and dry; pull them as soon as they hit temperature.
Oil & seasoning
Mist lightly so the surface browns; lean turkey has little fat of its own.
Season with: garlic, onion, Italian herbs, grated Parmesan, salt, black pepper.
Watch out for
- Confirm 165 °F — turkey is poultry and must be fully cooked.
- Don't overcook; lean turkey dries out fast past temperature.
