Doneness
Flesh is opaque white and flakes easily with a fork; surface is lightly browned where the oil contacted.
Oil & seasoning
Brush both sides with olive oil — tilapia is leaner than cod and sticks easily.
Season with: salt, black pepper, garlic powder, paprika, lemon.
Watch out for
- Tilapia fillets are thinner than cod — start checking at 7 minutes or they go dry fast.
- Do not flip. The fillet will tear and the seasoning sticks to the basket.
- Pull at 145 °F / 63 °C. Tilapia is a mild fish — overcooking gives it a cottony texture.
