Pull at 130 °F (54 °C) for medium-rare; the crust should be browned and the interior pink and juicy. Check the thicker strip side, which lags behind the tenderloin.
Oil & seasoning
Lightly oil the steak so the surface browns; the air fryer does the rest.
Season with: kosher salt, coarse black pepper, garlic powder.
Watch out for
- Pat the steak bone-dry — surface moisture steams and blocks browning.
- Rest 5–10 minutes before cutting so the juices stay in.
- Probe the thicker strip side; the bone makes the two sides finish unevenly.
- Bring it to room temperature first for an even cook.
