Doneness
The peppers are tender with lightly charred edges and the filling is hot throughout (165 °F), with melted, golden cheese on top. Firm, raw-tasting peppers need more time.
Oil & seasoning
Lightly brush the peppers with oil so the skins soften and char.
Season with: salt, black pepper, garlic, cumin, cheese, cooked rice.
Watch out for
- Use a fully cooked filling — the bake heats it through but won't cook raw meat.
- Stand the peppers upright so the filling stays in.
- Add cheese near the end so it melts without burning.
- Confirm 165 °F if the filling contains meat.
