Doneness
Mushroom caps have darkened and softened; the stuffing top is golden-brown and crisped; a small amount of dark juice has pooled in the basket around the caps.
Oil & seasoning
Brush the outside of each cap lightly with olive oil; spray the stuffing top after assembly for extra browning.
Season with: cream cheese + parmesan + parsley + garlic stuffing, Italian breadcrumbs (sprinkled on top), salt and black pepper.
Watch out for
- Remove the stems gently — twist instead of cut to keep the cap intact. A torn cap leaks all its filling into the basket.
- Wipe the caps with a damp towel; do not rinse under water. Mushrooms soak up rinse water like sponges and the stuffing will not crisp.
- Do not overfill — stuffing should mound slightly above the rim, not tower. Overfilled mushrooms collapse during cooking.
