Doneness
The meat has pulled back from the bone tips and a probe meets little resistance at about 200 °F (93 °C). The bark should be deep mahogany; pale, tight meat needs more time.
Oil & seasoning
No spray — the rub and the ribs' own fat are enough; add sauce near the end.
Season with: brown sugar, smoked paprika, garlic powder, salt, black pepper, barbecue sauce.
Watch out for
- Peel the silvery membrane off the bone side, or the ribs stay tough and chewy.
- Add barbecue sauce only in the final 3–5 minutes — sugar burns fast at 350 °F.
- Cut the rack into sections so it fits in a single layer.
- Cook to tender (~200 °F), not just to a safe temperature, for fall-off-the-bone ribs.
