Doneness
The skins are blistered with charred, blackened spots and the peppers have softened and collapsed slightly. Smooth, bright-green peppers need more time to blister.
Oil & seasoning
Toss with a little oil so the skins blister instead of drying out.
Season with: flaky sea salt, lemon, olive oil.
