The edges are charred and crisp and the chicken reads 165 °F (74 °C) throughout. Look for browned, slightly crisped tips — pale, soft pieces need a couple more minutes.
Oil & seasoning
A light mist helps the edges char; the marinade carries most of the fat.
Season with: cumin, coriander, paprika, turmeric, garlic, lemon.
Watch out for
- Confirm 165 °F — chicken must be fully cooked.
- Use thigh meat for the juiciest result; breast works but dries faster.
