Doneness
The caps are tender, darkened, and glistening, and a knife slides through easily. They shrink and soften noticeably — firm, dry caps need a few more minutes.
Oil & seasoning
Brush with marinade or a little oil; mushrooms soak it up and stay moist.
Season with: balsamic vinegar, garlic, olive oil, salt, black pepper, thyme.
Watch out for
- Wipe mushrooms with a damp cloth rather than soaking — they absorb water and turn soggy.
- Finish gill-side up so the caps hold their juices.
- Don't overcrowd; caps release moisture and steam if packed in.
- Scrape out the dark gills first if you want a milder flavor.
