Pull at 145 °F (63 °C) — the center can stay faintly pink and the juices run clear. The surface should be browned; cooking past 150 °F dries out this lean cut.
Oil & seasoning
Rub with a little oil so the seasoning adheres and the surface browns.
Season with: salt, black pepper, garlic powder, rosemary, thyme.
Watch out for
- Pork loin is safe at 145 °F — don't overcook this lean cut or it turns dry.
- Don't confuse loin with tenderloin (smaller, faster) or pork butt (needs low-and-slow).
- Rest 5–10 minutes before slicing.
- Sear-finish a couple of minutes longer if you want a darker crust.
