Doneness
Edges are caramelised deep golden-brown; centres are tender when pierced; the natural sugars have crisped slightly at the corners.
Oil & seasoning
Toss with 1 tablespoon olive oil. A drizzle of honey at the halfway shake deepens the caramelisation.
Season with: salt, black pepper, thyme, rosemary, cumin, honey (at the halfway mark).
Watch out for
- Cut the woody core out of large parsnips (over 1½ inches diameter) — it stays tough no matter how long you cook it.
- Cut to even batons. Mixed sizes burn some pieces while leaving others raw.
- Honey or maple at the halfway mark, not the start — sugar burns at 380 °F if added too early.
