Doneness
Cubes are golden-brown on every face with light char on the corners; centres remain soft and milky; cubes hold their shape.
Oil & seasoning
Toss with 1 tablespoon neutral oil and ¼ teaspoon turmeric for colour. Tikka masala paste or yogurt marinade works exceptionally well.
Season with: salt, garam masala, kashmiri chili powder, cumin, turmeric, yogurt marinade (optional).
Watch out for
- Pat the paneer dry before tossing in oil — surface moisture stops browning.
- Marinate in yogurt + spices for 20 minutes before air-frying for tikka-style paneer. The lactic acid tenderises and the marinade chars beautifully.
- Do not over-cook. Past 12 minutes paneer turns rubbery and squeaky.
