Doneness
A baked pancake is set and springs back when pressed, with golden edges; a toothpick comes out clean. Reheated pancakes are simply hot and lightly crisp at the edges.
Oil & seasoning
Grease the pan or mold so the batter releases cleanly.
Season with: vanilla, cinnamon, maple syrup (after cooking), butter.
Watch out for
- Don't pour loose batter into the basket — use a shallow pan or silicone mold.
- Add syrup and toppings after cooking, not before.
- Keep the batter layer thin enough to cook through.
- For reheating, lay pancakes flat in a single layer.
