Wrappers are uniformly golden-brown with crisp, slightly blistered edges; tapping a roll with a fork should produce a hollow crackling sound rather than a soft thud.
Oil & seasoning
Optional light spray for a deeper colour — pre-fried frozen rolls have enough oil baked in to crisp without it.
Watch out for
- Do not thaw — thawed wrappers go gummy and stick to the basket.
- Single layer only — touching rolls fuse together at the contact point and the wrapper tears when separated.
- Flip with tongs, not by shaking — the basket shake bursts thinner wrappers and the filling leaks.
