Doneness
Flesh is opaque white with no translucent areas; shell is bright red; meat curls up out of the shell at the top.
Oil & seasoning
Brush the exposed meat with melted butter mixed with garlic and lemon.
Season with: salt, garlic, lemon zest, paprika, fresh parsley after cooking.
Watch out for
- Butterfly the tail before cooking — split the shell down the top with kitchen shears, pull the meat up and out, rest it on top of the shell. This is the classic restaurant presentation and it cooks more evenly.
- Do not overcook. Lobster goes rubbery the moment it crosses 145 °F internal. Pull at 140 °F.
- Brush more butter on at the halfway mark to keep the meat glossy.
