Doneness
Hush puppies are done when the outside is an even deep golden-brown with a crisp shell and the inside is set and fluffy — moist cooked cornmeal, not wet, gummy raw batter. A toothpick pushed into the centre should come out clean. They firm up and brown as they cook; a pale puppy is still raw in the middle and needs another minute or two. Because they're a fried cornmeal batter, doneness is the colour and a clean toothpick, not a probe temperature.
Oil & seasoning
Spray generously — both the formed mounds before cooking and again at the turn. Oil is what crisps and browns the cornmeal shell in place of the deep-frying oil hush puppies are traditionally cooked in; an under-sprayed batter comes out pale, dry and floury-tasting rather than crisp and golden.

Watch out for
- The batter must be thick and scoopable, not pourable. A loose, runny batter slumps and drips straight through the holes in the basket — keep it stiff enough to hold a mound on a spoon, and chill the scooped balls 10–15 minutes so they keep their shape.
- Use a perforated parchment liner and spray it. Hush puppy batter sticks to a bare basket and tears when you turn it — a sprayed liner lets them release cleanly.
- Turn or shake gently, and not too early. The shell needs the first few minutes to set; shaking before then breaks the soft mounds apart. Wait until at least the 5-minute mark and move them gently.
- Spray generously. Without enough oil the cornmeal surface stays pale and tastes raw and dry instead of crisping into the signature golden shell — the spray stands in for the deep-fry oil.
