Doneness
Both sides are golden and crisp and the cheese is fully melted and oozing. Pale bread means another minute; check that the center cheese has melted before pulling.
Oil & seasoning
No spray — butter the outer faces of the bread.
Season with: butter, cheddar or American cheese.
Watch out for
- Secure the top slice for the first minute so the convection air doesn't lift it off.
- Use a melting cheese; aged hard cheeses stay greasy rather than gooey.
- Don't over-butter, or the bread fries unevenly.
- Flip gently at the halfway point.
