Doneness
Beans are bright green with charred tips; centres are tender-crisp (slight bite remains); a few may be deep brown — that is the prize.
Oil & seasoning
Toss with 1 tablespoon olive oil. Optional: minced garlic in the oil.
Season with: salt, black pepper, garlic, lemon zest, red pepper flakes.
Watch out for
- Trim only the stem end, not both — the curved tip is fine to eat and helps anchor the bean to the basket grate.
- Do not crowd. Stacked beans steam and stay limp.
- If using haricots verts (thin French beans), reduce time to 6 minutes.
