Doneness
Surface is golden-brown and toasted; garlic butter has melted into the bread and is just starting to bubble at the edges; cheese (if used) is melted and lightly browned.
Oil & seasoning
Spread softened garlic butter (4 tbsp butter + 4 cloves minced garlic + parsley) generously on the cut face. Skip the oil — the butter is the fat.
Season with: garlic, parsley, salt, parmesan (optional), red pepper flakes (optional).
Watch out for
- Do not exceed 6 minutes — the bread goes from toasted to scorched in under a minute at this temperature.
- Use slightly stale bread (1–2 days old). Fresh bread steams in its own moisture and stays soft.
- Butter-side up only. The garlic butter needs the convection air directly on it to melt and caramelise.
