Slices are deeply golden-brown on both faces; centres are silky-soft and slightly translucent, not spongy or chalky.
Oil & seasoning
Brush both sides generously with olive oil — eggplant absorbs oil like a sponge, but starving it produces dry, chalky slices.
Season with: salt, black pepper, garlic powder, oregano, basil.
Watch out for
- Salt the slices generously and rest 30 minutes — sweats out the bitter water. Pat dry before oiling.
- Do not skip the oil. Under-oiled eggplant tastes like cardboard. A generous brush on both faces is non-negotiable.
- Flip carefully — eggplant slices get soft and can tear. Tongs, not a spatula.
