Doneness
The breaded slices are golden and crisp and the cheese, added near the end, is melted and bubbling. Soggy, pale coating means the eggplant wasn't drained or the basket was crowded.
Oil & seasoning
Mist the breaded slices so the coating crisps instead of staying dry.
Season with: salt, Italian breadcrumbs, grated Parmesan, garlic powder, marinara, mozzarella.
Watch out for
- Salt and drain the eggplant slices first to draw out moisture and bitterness.
- Add sauce and cheese only in the last few minutes, or the coating goes soggy.
- Mist the breading with oil so it browns.
- Cook in a single layer; stacked slices steam and stay soft.
