Doneness
Done when the half-moons are fork-tender with deeply caramelized, golden-brown edges and the thin skin is soft enough to eat. Flip them at the halfway mark so both cut sides brown. They should give easily when pierced; if the edges are browning but the centres are still firm, give them a couple more minutes.
Oil & seasoning
Yes — toss the slices in a little oil before cooking so the edges caramelize and the skin crisps. A light spray partway through helps any dry spots.

Watch out for
- Don't peel it — delicata's thin skin is fully edible and holds the half-moons together, which is exactly why it's the easiest squash to air-fry. Just scrub it.
- Halve it lengthwise and scoop out the seeds and stringy pulp before slicing.
- Cut even ½-inch half-moons so they cook at the same rate; thick chunks stay firm while thin ones burn.
- Spread them in a single layer with space — crowded slices steam and turn mushy instead of caramelizing.
- Sweet glazes (maple, brown sugar) can scorch — add them in the last few minutes or toss after cooking.
