Doneness
Done when the spirals are deep golden and crisp on the outside and the seasoning has darkened slightly. Shake the basket at the halfway mark to untangle the curls so they crisp on all sides rather than steaming where they touch. Pull them while crisp — go by colour, there is no internal temperature to hit.
Oil & seasoning
Not needed — frozen curly fries come battered, pre-seasoned, and par-fried, so they crisp on their own. A very light spray only if you want a deeper colour.

Watch out for
