Doneness
Kernels are bright yellow and slightly charred in spots; rolling the cob shows the kernels are plump and tender (not shrivelled).
Oil & seasoning
Brush each cob with melted butter (or olive oil) before cooking and again at the halfway flip.
Season with: salt, black pepper, chili powder, lime juice, cotija (after cooking).
Watch out for
- Husk the corn completely. Air-frying in the husk steams the kernels instead of charring them — defeats the purpose.
- Cut the cob to fit if necessary. A whole cob taller than your basket touches the heating element.
- Brush butter twice — once before cooking, once at the flip. Once is not enough.
