Doneness
The cornmeal coating is crisp and golden brown and the center is steaming hot. Pale or soft batter needs another minute or two.
Oil & seasoning
None needed — the battered coating crisps on its own.
Season with: mustard, ketchup.
Watch out for
- Leave space between corn dogs so the batter crisps all around.
- Don't add oil — the coating browns without it and gets greasy with it.
- Heat the center through to 165 °F, not just the coating.
- Turn them gently so the batter doesn't crack off the stick.
