Doneness
Flesh is opaque white throughout and flakes apart easily with a fork; no translucent areas remain.
Oil & seasoning
Brush both sides with olive oil — cod is very lean and will stick to a dry basket.
Season with: salt, black pepper, lemon zest, dill, garlic powder, old bay.
Watch out for
- Do not flip cod — the flesh is delicate and breaks easily. Cook once through.
- Pat the fillets dry before seasoning. Wet fish steams instead of crisping.
- Pull at 145 °F / 63 °C internal. Cod is safe but flakes apart by 150 °F.
