Doneness
Florets are deeply charred at the edges with crisp brown tips; centres yield to a fork; the smell is sweet and nutty, not sulphurous.
Oil & seasoning
Toss with 1½ tablespoons olive oil — cauliflower needs more oil than broccoli to brown.
Season with: salt, black pepper, smoked paprika, garlic powder, cumin, turmeric.
Watch out for
- Cut all florets to the same size — uneven pieces mean some burn while others stay raw.
- Cauliflower without enough oil tastes bitter and sulphurous. The minimum is 1½ tablespoons per head.
- Stop at the 14-minute mark even if it looks pale — going longer turns the florets soft and grey.
