Doneness
The batter is set, golden, and crisp at the edges, and a floret pierces tender at the center. Pale or wet-looking spots need more time before saucing.
Oil & seasoning
Spray the battered florets lightly so the coating crisps instead of drying out.
Season with: garlic powder, smoked paprika, salt, buffalo sauce, BBQ sauce.
Watch out for
- Sauce after cooking, not before — wet batter won't crisp.
- Spread the florets in a single layer with gaps so they brown instead of steaming.
- Let excess batter drip off before placing them in the basket.
- For baked-on sauce, toss the cooked florets and return them for 2 minutes.
