Doneness
Cubes are deeply golden-orange with charred edges; centres yield to a fork; outsides are crisp-edged while interiors are silky.
Oil & seasoning
Toss with 1½ tablespoons olive oil — the squash needs oil to crisp.
Season with: salt, black pepper, cinnamon, smoked paprika, maple syrup (at halfway).
Watch out for
- Use a sturdy Y-peeler — butternut skin is tough and a regular peeler stalls.
- Cut to even 1-inch cubes. Smaller pieces burn; larger pieces stay raw inside.
- Single layer only. Stacked squash steams and stays pale.
