Doneness
Brisket is done when a probe slides in with almost no resistance and the internal temperature reaches about 203 °F (95 °C) — that's where the connective tissue has rendered to tender. A firm, springy feel means it needs more time, not less.
Oil & seasoning
No spray — a thin coat of mustard or oil helps the salt-and-pepper rub stick and form a bark.
Season with: kosher salt, coarse black pepper, garlic powder, smoked paprika.
Watch out for
- Brisket needs to reach ~203 °F to turn tender — pulling it at a steak temperature leaves it tough.
- Wrap in foil partway through to keep the bark from burning before the inside is done.
- Air fryers suit small portions; a full packer brisket won't fit or cook evenly.
- Rest at least 15 minutes, then slice against the grain.
