Doneness
Cubes are golden-brown on multiple sides with crisp edges; a fork pierces through with no resistance and the interior is fluffy white.
Oil & seasoning
Toss with 1 tbsp olive oil before adding — potatoes need fat to crisp.
Season with: salt, smoked paprika, garlic powder, onion powder, black pepper.
Watch out for
- Soak the diced potatoes in cold water for 10 minutes before cooking — this removes surface starch and prevents them from sticking together in the basket.
- Dry the cubes thoroughly with a towel after soaking. Wet potatoes steam instead of crisping.
- Cut to even ½-inch cubes. Mixed sizes lead to a mix of burnt-and-underdone in the same batch.
