Doneness
Edges are blistered with charred black spots; flesh is tender but still has a little bite; skin is slightly wrinkled.
Oil & seasoning
Toss with 1 tablespoon olive oil — needed for the char.
Season with: salt, black pepper, garlic powder, smoked paprika, balsamic glaze.
Watch out for
- Cut to even-size strips. Mixed sizes mean some are raw while others are blackened.
- Red, orange and yellow peppers char faster than green — start checking at 8 minutes if you have only red/orange.
- Single layer. Stacked peppers steam and stay limp.
