Doneness
Top has cracked along the centre and gone deep golden-brown; sides have pulled away from the pan by 1/8 inch; a wooden skewer inserted to the centre comes out clean with only a few moist crumbs (no wet batter). Loaf feels firm and springs back when pressed lightly at the centre.
Oil & seasoning
Grease the loaf pan with butter and dust with flour, or line the base with a parchment sling for clean release. The batter itself contains 4 tablespoons of butter or oil — no additional spray needed.
Season with: very ripe bananas, all-purpose flour, sugar, butter, eggs, baking soda, salt, vanilla, walnuts or chocolate chips (optional).
Watch out for
- Use 3-4 very ripe bananas with heavy black spotting. Yellow bananas don't have the converted-starch sweetness or the moisture content; the loaf bakes drier and flatter.
- Tent the top with foil at 18 minutes if the surface is browning faster than the centre is setting. Air-fryer convection over-browns loaf tops more aggressively than ovens do.
- Check doneness with a skewer at 25 minutes. Air fryers vary by ±3 minutes for baked goods of this size; pulling at the right moment is more important than the exact clock time.
- Smaller pans bake faster — a 4 × 4 inch square pan cuts the time to 22 minutes. Match your pan to your basket dimensions and adjust accordingly.
