Tips are crisp and slightly charred; spears bend gently when picked up by the stem (not droopy, not stiff).
Oil & seasoning
Toss with 1 tsp olive oil; spear surface is small so oil goes a long way.
Season with: salt, black pepper, lemon zest, parmesan (after cooking).
Watch out for
- Snap the woody ends off before cooking — bend each spear and let it break where it naturally wants to.
- Pencil-thin spears need 5 minutes; thick spears (½ inch+) need 9–10.
