Doneness
The hearts are golden and crisp at the edges, tender inside. Pale, wet-looking hearts mean they weren't dried enough or the basket was crowded.
Oil & seasoning
Toss with a little oil so the edges crisp and brown.
Season with: garlic powder, grated Parmesan, salt, black pepper, lemon.
Watch out for
- Pat canned or thawed hearts very dry — surface moisture steams and prevents crisping.
- Spread them in a single layer so they brown instead of steaming.
- Shake the basket halfway for even color.
- Toss in Parmesan in the last couple of minutes so it doesn't burn.
