Doneness
The crust is evenly golden and the apple filling bubbles through the vents. A pale crust or firm, un-bubbling filling needs more time; cover the top with foil if it darkens too fast.
Oil & seasoning
No spray — brush the crust with egg wash for color and shine.
Season with: cinnamon, nutmeg, brown sugar, lemon, butter.
Watch out for
- Cut vents in the top crust so steam escapes and the filling doesn't bubble over.
- Tent with foil if the crust browns before the filling is bubbling.
- Use a pie that fits the basket with room for air to circulate.
- Let it cool at least 20 minutes so the filling sets before slicing.
