Doneness
The fritters are golden brown and set through, springing back lightly when pressed. A doughy, pale center means another minute or two — check the thickest one.
Oil & seasoning
Spray the parchment and mist the tops so they brown evenly instead of drying out.
Season with: cinnamon, nutmeg, vanilla, powdered sugar (for glaze).
Watch out for
- Use a parchment liner — wet batter falls through a bare basket.
- Leave space between fritters; they spread as they cook.
- Glaze after they cool slightly, or the icing melts and runs off.
- Check the center of the thickest fritter for raw batter before pulling.
