Doneness
Cut sides are deeply caramelised; flesh near the edges is golden-brown; a fork pierces the flesh with no resistance.
Oil & seasoning
Brush the cut faces with melted butter or olive oil. A spoonful of butter in each cavity melts and bastes the flesh.
Season with: salt, black pepper, brown sugar in the cavity, cinnamon, nutmeg.
Watch out for
- Cut-side up only — placing cut-side down traps steam against the flesh and stops the caramelisation.
- Score the cut face in a crosshatch pattern about ¼ inch deep before cooking. The cuts let seasoning penetrate and the surface caramelise more evenly.
- Halve through the stem (top to bottom), not equator-wise — the stem half steadies the squash so it sits flat in the basket.
